Prediction of Profit and Consumer preference of food product which sweet potatoes substituted

ABSTRACT

This research aims to know the level of consumer preference, based on sweet potatoes substitution level for food product, this also analize to the cost and profit and how far sweet potatoes substitute wheat on composition of food product that can be accepted by consumer, consumer valuation basically, in fluence factors of consumer preferences of food product of sweet potatoes substitution. The total number of respondents are 60 persons, this number consist of 40 students, 10 lecturers, 10 staffs. Accidental quota sampling was used to took the samples. Data collected by questionair which filled after the respondent consumning product sample: that are chocolate bread, brownies and pizza
The result of the research that are the consumer preference to pizza with 80% sweet potatoes substitute is higher by texture and taste valuation basically, with total cost production is Rp32.022 and the profit that can get is Rp39.978,. Factors which have correlated are consumer behavior, salary, and home town. The consumer preference to brownies with 80% sweet potatoes substitute is higher by texture, appearance, and taste valuation basically, with total cost is Rp21.761 and the profit is Rp, 26.577. Factors which have correlated are consumer behavior, job, and sex/gender. The consumer preference to chocolate bread with 60% sweet potatoes substitute is higher by texture, appearance, and taste valuation basically, with total cost Rp30.105 and the profit that can get is Rp29.895. . Factors which have correlated are consumer behavior, job, sex/gender, and home town.
